Easy Peasy Macaroons

Sometimes when I'm not really in the mood for baking or my lists of baking tasks seem daunting I have to start with a recipe like this. Its easy. Its a confidence booster. Its something I can check off my list in half an hour. It smells good.

Here is the recipe.... now pay attention.... 1 bag of coconut (14 oz), 3/4 cup of sugar, 1/3 cup of flour, 4 egg whites, 1/2 teaspoon of almond extract, 1/4 tsp salt, mix and bake at 325 for about 20 minutes or until the level of golden brown that you prefer.


Some like it just barely golden, others crunchy brown bits of coconut.

Preheat your oven to 325 degrees.


Grease and flour a cookie sheet. Has anyone tried the bakers spray with the flour in it? I need to know how that works because the problem with using actual cookie sheets is that you can't tap the flour round the edges.

Dump your bag of coconut in a medium bowl.

Dump your 3/4 cup of sugar. I love the way the sugar sparkles. But we don't have any natural light in here so you have to just believe that its all white and sparkly.

Or I could learn to adjust my white balance.

1/4 teaspoon of salt. I always add the salt when a recipe calls for it but you don't have to.

Dump in 1/3 cup of flour.

I like to get my hands in and mix it up at this point and break up any large chunks of coconut. You can use a spoon if you don't like to get your hands dirty.

Ick. Add in 4 egg whites. The whites only. You know, just the snotty part. Egg whites gross me out.


Mix the whole thing together to make your "dough" although its not really very doughy. Dough sounds better than saying "mix until your coconut has an even snotty sheen".


But I said it anyway, didn't I?

Oh and add your almond extract in there too!

I've told you before that I like my cookies and such leetle. That way when you have a spread of 983 different kinds of cookies people are more likely to try a variety. Plus they are easier to snack on and disappear faster.


I use a heaping teaspoon and I use the 1/2 teaspoon to help me get the sticky coconut mixture onto the cookie sheet in a somewhat pretty manner.


Now would be a great time to use the cookie dough scooppy thing I got at the bridal shower but left at my house.

Line 'em all up and pop them in the oven for about 20 minutes.

They smell delicious! Use a spatula and get those little balls of goodness off that tray. I made about 35 ish?

At this point you can fancy them up. You can drizzle with chocolate (milk, dark or white) or dip them or drizzle with colored candy coating. I like to add a bit of red and green drizzle to help add color to the cookie display.

I'm not going to do that just yet because I am freezing mine. Place in a container in layers separated by wax paper. Freeze for up to 3 months.


I take them out of the freezer a few days before I want to eat them and let them defrost in the container, then drizzle if you want to.

If you take your plate of cookies outside to take pictures... watch out for thieves....

  3. They look good, and really easy. I love to see the foreign packets of ingredients. Here our flour packets are always large and the sugar bags small. So I'd get disoriented while baking with these and need to snack on 4 or 5 macaroons to recover.

  4. I just happen to have a bag of coconut in the fridge waiting for just such a higher purpose.

    And I love the baking spray. It works, and it smells delicious. Weird, but it does.

  8. Mmmm, those look great! Cute dog too. The PAM with flour...A.W.E.S.O.M.E, seriously it makes life easy. I ran out of cupcake liners the other day, so I sprayed my pan with that and the little suckers slid right out.

  9. Go for the spray...haven't floured a pan in years. If you need a celebrity endorsement, Pioneer Woman and SmittenKitchen both use it.

  10. The flour spray is awesome. I use it for my hubby's favorite Kahlua coffee cake that will NOT come out of a bundt cake pan that has been floured. Works like a charm.

    I love macaroons. My Grandpa started calling them macaroonies, so that's what we call them now, too. A coconutter macaroonie. Strange, yes.

    No number 2 at present. Not ready. I need to wear a real bra instead of a nursing one for a few months before I feel like I real human being, instead of a milk cow...THEN we can think about #2. But heck, as soon I I press "post comment" all my plans will go out the window.

  17. I just made these the other day! But I did the vegan version with coconut milk instead of eggs, and coconut flour instead of all purpose flour! Still good, but yours look really really good!
