
It started with the 3 over-ripe bananas sitting on my parents counter. A quick search thru Tasty Kitchen and I found this recipe. It's very easy and very tasty. I received rave reviews and was impressed with how moist these were.

Preheat your oven to 350.
In a bowl sift together 1 1/2 cups flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt, 1/4 tsp allspice and 1/4 tsp cinnamon.

In a large bowl mash up your 3 bananas.
Bananas = health food

Add 3/4 cup sugar, 1 egg and 1/3 cup melted butter. Mix it all together with a spoon or spatula.

Fold in flour mixture and mix only as much as necessary.
At this point you can add in 1 cup of chocolate chips. It's optional but really as soon as someone mentions chocolate chips I don't really think it's an option.

For the topping take a small bowl and combine 1/3 cup brown sugar, 2 tbs of flour, 1/8 tsp cinnamon and 1 tablespoon room temp butter.

When the butter is cut/mashed in you should have something resembling these crumbs.

I decided to use the mini muffin tin and came out with about 3 dozen. Baked for about 10 minutes, these came out perfect. If you are cooking regular size muffins bake for 25-30 minutes.

I just love banana and chocolate :)
Oh now I have to go and get some bananas and let them get overripe. That won't be a problem because we aren't that fond of bananas around here...unless they are in Banana bread or our personal favorite, Banana Chip Bars.

ReplyDeleteOh yes, those look divine. Banana and chocolate together = food love. I've been making banana, chocolate yogurt protein shakes. Sometimes I throw in a spoon of PB. But nothing beats that banana and chocolate combo.

I have a recipe for banana choc chip muffins, but they are not nearly as yummy as these look. That topping must be the secret.
